Grilled Fiery Pork With Pineapple Salsa

Since a brand new grill joined our family over the weekend, I have been falling in love with grilled recipes all over again. This particular recipe also comes from EatBetterAmerica.com (have I mentioned how much I love that site? lol). This one takes about 40 minutes start to finish - and couldn't be easier to put together!

Grilled Fiery Pork With Pineapple Salsa

WHAT YOU WILL NEED:
Pork:

  • 2 tsp canola oil
  • 2 pork tenderloins (3/4 lb each)
  • 1 tsp black pepper
  • 1/4 to 1/2 tsp ground pepper (cayenne)
  • 1/2 tsp salt
Pineapple Salsa:
  • 1 can (8oz) pineapple tidbits in juice, drained
  • 4 med green onions, sliced (1/4 cup)
  • 1/4 cup chopped red bell pepper
  • 1 tbsp chopped fresh or 2 teaspoons dried mint leaves
  • 1/2 tsp grated lime peel
  • 2 tsp lime juice

HOW TO MAKE IT:
  1. Heat coals or gas grill.
  2. Rub 1 tsp oil onto each pork tenderloin; sprinkle with black pepper, red pepper and salt.
  3. Carefully brush oil on grill rack.
  4. Place pork on grill over medium heat. Cover grill.
  5. Cook 20-30 minutes, turning 3 times until pork has slight blush of pink in center and meat thermometer inserted in center reads 160 degrees F.
  6. Meanwhile, in a medium bowl, stir together salsa ingredients.
  7. Cut pork into 1/2 inch slices.
  8. Serve with salsa.
