Since a brand new grill joined our family over the weekend, I have been falling in love with grilled recipes all over again. This particular recipe also comes from EatBetterAmerica.com (have I mentioned how much I love that site? lol). This one takes about 40 minutes start to finish - and couldn't be easier to put together!
Grilled Fiery Pork With Pineapple Salsa
WHAT YOU WILL NEED:
Pork:
- 2 tsp canola oil
- 2 pork tenderloins (3/4 lb each)
- 1 tsp black pepper
- 1/4 to 1/2 tsp ground pepper (cayenne)
- 1/2 tsp salt
- 1 can (8oz) pineapple tidbits in juice, drained
- 4 med green onions, sliced (1/4 cup)
- 1/4 cup chopped red bell pepper
- 1 tbsp chopped fresh or 2 teaspoons dried mint leaves
- 1/2 tsp grated lime peel
- 2 tsp lime juice
HOW TO MAKE IT:
- Heat coals or gas grill.
- Rub 1 tsp oil onto each pork tenderloin; sprinkle with black pepper, red pepper and salt.
- Carefully brush oil on grill rack.
- Place pork on grill over medium heat. Cover grill.
- Cook 20-30 minutes, turning 3 times until pork has slight blush of pink in center and meat thermometer inserted in center reads 160 degrees F.
- Meanwhile, in a medium bowl, stir together salsa ingredients.
- Cut pork into 1/2 inch slices.
- Serve with salsa.
